Abstract Kafirin, the hydrophobic prolamin storage protein in sorghum grain is enriched when used for bioethanol production to give dried distillers with solubles (DGGS) as a by-product. There great interest DDGS kafirin new source biomaterials. however lack of fundamental understanding how physicochemical properties having been exposed high temperature conditions during ethanol production, compare made directly from grain.
